Best Easy Gourmet Spinach, Pine Nut & Fig Pizza Recipe
- Black or White Truffle Oil
- Truffle Salt
- Pine Nuts
- Fresh Mozzarella
This is a very easy gourmet recipe which will result in one of the best pizzas you’ve ever had in your life. Let’s keep it simple and not even make sauce; we will just slice the tomatoes and lay them out on top of the pizza dough.
- Figs, pine nuts, spinach, roma tomatoes, cheese & dough
- Save time and make enough pizza dough for four pizzas
6 plum tomatoes
1/2 tablespoon truffle salt
1 Fresh Mozzarella – about the size of a baseball
1/2 tablespoon of black or white truffle oil
3 oz pine nuts
12 basil leaves green or purple or both
6 oz spinach
1 ball of pizza dough from our pizza dough recipe
This spinach pizza recipe is faster if you just go to the grocery store and buy a ready made pizza dough. It is not difficult to make pizza dough because it only requires yeast, flour, salt and water. Making the your own pizza dough just requires time because it needs to rise for one hour then get kneaded again and allowed to rise another 30 minutes. When we mix flour and water the proteins will expand and form strands of gluten. When we knead the dough the second time we get the pockets of air out of the pizza dough. If you buy your pizza dough from a store then this will be one of the easiest gourmet recipes you’ve ever made.
Slice the tomatoes into about 1/8 inch thick pieces. Cut each fig into 8 parts. Heat the spinach in a large frying pan with a little truffle oil until it is wilted. Add the pizza ingredients in this order:
- Tomato slices
- Fresh mozzarella
- Pine nuts
We don’t want the tomatoes or basil to burn so we hide them under the cheese. We do want the figs and pine nuts to get plenty of so they go on last. Drizzle a little truffle oil over the entire pizza, just drops. You can also sprinkle lightly with truffle salt. Once your oven is at 500 degrees put your pizza in on top of your pizza stone. Remove the pizza as soon as the buffalo mozzarella has any golden color. You may notice that the fresh mozzarella looks like it is melting and turning into milk on your pizza and this is normal.
- Add tomato slices first then basil (purple and green basil shown)
- Fresh mozzarella next followed by spinach
- Figs go next and pine nuts on top so they can roast
- Fresh from the oven, allow pizza to cool 5-minutes
You will find that the pine nuts added last will become toasty and delicious. The figs have natural sugars that will begin to caramelize giving this pizza a sweetness not commonly found in pizzas.
When the cheese looks golden then your pizza is done and ready to sit on the rack for a few minutes and then slice. The rack allows moisture to escape. If you place the pizza directly onto a plate as soon as it comes out then the moisture is trapped at the bottom and you may get a soggy crust.
