Yes I know what you are thinking; this pizza is made with brussel sprouts how can it possibly taste good? When your mom forced you to eat these foul smelling things as a kid she never realized how much better brussel sprouts could taste when used as the featured ingredient in a pizza. You will see that in this recipe the brussel sprouts will take on a much more mild aroma and flavor. You will find it hard to believe that you are actually eating brussel sprouts and enjoying every bite.

6 brussel sprouts
1/2 tablespoon truffle salt
1 Buffalo Mozzarella – about the size of a baseball
1/2 tablespoon of black or white truffle oil
1 ball of pizza dough from our pizza dough recipe
This brussel sprout pizza recipe is faster if you just go to the grocery store and buy a ready made pizza dough. It is not difficult to make pizza dough because it only requires yeast, flour, salt and water. Making the your own pizza dough just requires time because it needs to rise for one hour then get kneaded again and allowed to rise another 30 minutes. When we mix flour and water the proteins will expand and form strands of gluten. When we knead the dough the second time we get the pockets of air out of the pizza dough. If you buy your pizza dough from a store then this will be one of the easiest gourmet recipes you’ve ever made.
Take 6 big brussel sprouts and rip off the 2 or 3 outer darker hard leaves. Then cut off the stem and that will make peeling off the other leaves easier. Peel the brussel sprouts so that you collect the leaves in a bowl as shown above. If you have already had your pizza dough rise and stretched it into shape then sprinkle the dough with truffle salt. This addition of truffle salt in unrelated to the regular salt used in making the pizza dough. Rip the buffalo Mozzarella into pieces and distribute them evenly over the pizza dough. Now spread out the brussel sprout leaves evenly over the pizza dough. Drizzle a little of the black or white truffle oil on top of the leaves.
Once your oven is at 500 degrees put your pizza in on top of your pizza stone. Remove the pizza as soon as the buffalo mozzarella has any golden color. You may notice that the buffalo mozzarella looks like it is melting and turning into milk on your pizza and this is normal.

When the cheese first begins to get some golden color crack an egg right in the center and then put it back in the oven. As soon as the egg begins to look white then remove it from the oven and break the egg with a fork and spread it around. Put the pizza on a wire rack to cool for a few minutes. The egg will continue to cook from the heat of the pizza. Once the pizza is cooled for a few minutes then the egg will be more solid and maybe not 100% solid and that’s ok; start eating the best pizza you’ve ever had.
