Easy Gourmet Wild Mushroom Risotto Recipe
- Dried Wild Mushroom Mix
- Parmesan Cheese
- Mozzarella Cheese
- Arborio rice
- Vegetable Soup Stock
- White Wine
- Olive oil
This is a very easy gourmet wild mushroom risotto recipe. You can tell by the short list of ingredients that this won’t take long to make but it will taste amazing.
- Put arborio rice, wild mushrooms, chicken stock & wine in pot
- Bring to a boil then lower heat to simmer
- Put rice mushroom mix into an oven proof dish
- Add cheese then broil a few minutes until cheese is golden
1 1/2 cup of arborio rice.
1/2 cup dried wild mushroom mix
1/4 cup olive oil
32 ounces of vegetable broth
1/4 cup of water
1 cup freshly grated parmesan cheese
1/2 cup mozzarella cheese
1/2 cup white wine
Rinse the wild mushroom mix in a strainer then put in a bowl with olive oil and water. Allow this to soak several hours; overnight is better. The liquid will become very dark. Put the arborio rice, mushrooms and dark liquid, white wine, vegetable broth and 1/2 cup parmesan cheese into a pot. Bring this to a boil then lower heat to a simmer for about 20 minutes. Remove mixture from the pot into four ovenproof bowls then add a mix of 1/2 cup mozzarella cheese and 1/2 cup grated parmesan cheese on top of the rice mixture. Broil a few minutes until the cheese bubbles and becomes golden.
In the grocery store you might find something called “risotto pasta” that is going to be pasta shaped like the rice that you should be using. Risotto is made from arborio rice not pasta.
