Easy Gourmet Eggplant Parmesan Recipe
- Dried Wild Mushroom Mix

- Mozzarella Cheese
- Grain Bread
- Pizza Sauce

This is a very easy gourmet eggplant parmesan recipe. You can tell by the short list of ingredients that this won’t take long to make but it will taste amazing. You’ll get about six sandwiches from this eggplant parmesan recipe.
1/4 cup parmesan cheese
1 cup mozzarella cheese
1 cup pizza sauce
1/4 cup of olive oil
Your favorite grain bread or sourdough bread or rolls
1/4 wild mushroom mix
Wild mushrooms have a strong flavor which can easily overpower your eggplant parmesan. For this reason we only use a small amount of wild mushroom mix. Let the dried wild mushroom mix soak in warm water for 15 minutes. Make thick round slices of the eggplant, about 1/2 inch thick. Coat a cast iron griddle or heavy frying pan with a thin layer of olive oil and cook the eggplant on medium heat until golden on both sides. You can make your own pizza sauce or spaghetti sauce or buy some ready made. Alternatively you may want to just use thick slices of tomato and add fresh basil leaves (my favorite option).

To build your eggplant parmesan sandwiches begin by toasting the thickly sliced bread and then top with eggplant. Add pizza sauce or tomatoes with fresh basil leaves and add bits of wild mushroom mix. Next add the parmesan and mozzarella cheeses mixed. Now put this under the broiler until the cheese melts and turns golden.
